One of the Kyoto Vegetables that Kyoto has officially recognized. People in Kansai region enjoy it as an ingredient of Harihari Nabe (Harihari one-pot cooking). It is said to have been named after the Mizuna’s crispiness. Today they also eat it in salad and other dishes.
