Thick and more than 80 centimeters long. It was named after where it’s harvested: Shimonita, western part of Gumma Prefecture. It takes more than one year from sowing to harvesting. Therefore only a small number gets shipped and is hard to obtain. Commonly grilled or used in one-pot cooking.
