You can cook and eat it as sashimi or grill without getting rid of its harsh taste if it’s fresh enough. It is also commonly boiled or used as a mixing ingredient with rice. Since it has a unique shape, there is a popular chocolate snack in form of bamboo shoot called “Takenoko-no Sato”.
